What do you do with leftover mashed potatoes? I usually do shepherd pie but my oldest requested meatballs for this week and that's the last of my hamburger. I also don't have a lot of leftover potatoes but my kids won't eat mashed potatoes so it's still a lot for me to eat.
Eat the rest of them for dessert while I'm washing the dishes?

Mix in an egg, a bit of flour and maybe some cheese and/or onions/herbs, press them into little patties and fry them up in a bit of oil as potato pancakes for breakfast the next morning. Awesome with a bit of sour cream on the side!

Yep this! Fried potato patties. We also serve them with lunch and supper.

I made the potato pancakes with cheese and green onion for lunch. Thanks for the suggestions! My kids hated them, but that just means more for me, right?

I love mashed potato cakes but my kids hate them too (but they love the plain mashed potatoes, kids are weird).
I was going to suggest freezing them. I always make a double batch of potatoes and freeze half for later. I just put them in a quart ior gallon ziploc and toss them in the freezer. I let them thaw on the counter the day I am going to use them and then just squeeze them out into a bowl and microwave them. They look at little loose a first but after cooking will thicken right up.
