Neither of my girls care for mac and cheese. My oldest will eat it home made but thats as close as it gets. But both absolutely love broccoli especially if its roasted and my youngest loves plain lettuce with nothing on it.
C hates cheese unless it's on pizza. Also yogurt - until 2 days ago when she ate three different kinds. She won't eat hot dogs, any noodles, or potatoes in the form of tater tots.
Not mine but at my wedding rehearsal my nephew was walking around stealing people's mussels. It was a week before his third birthday. He has an entire plate piled with shells by the time he was done.

DD loves mussels. She has been eating them pretty much since around a year old. We started out giving her bread to dunk in the broth. People are amazed when they see her eating them in the volume that she does. And DH and I love them, so it's almost always an app we order when going out to eat.
They also both really like regular fried eggs. 2 for each at breakfast most mornings. The only cereal either of them really want/will eat a decent amount of is Kix (which is fine. Relatively healthy. Just so boring).
DD does not like bananas or banana flavored anything, which I think is a weird kid thing to not like.
DS isn't crazy about the taste of milk apparently and would rather water in his bottle lately.
DD hates bananas too!
She also hates applesauce but loves fruit in general. she barely eats pasta....come on man, we are Italian.
Neither of my kids have applesauce has a must have. I mean they'll eat if I give it to them but they don't ask for it and will leave half of it most of the time. The only kind they seem to love is the homemade, warm, cinnamon, super chunky kind and even then it's a toss up.
None of my kids eat anything exotic...except sushi (california rolls). DD1 & DD2 eat normalish kid friendly stuff. DD3 & 4 eat very few things. I cannot even imagine my kid only refusing a handful of foods. I get tears & crying over chicken noodle soup, spaghetti, etc. I lost my will to cook a few years back. My younger 2 were seriously born with an aversion to food...they wanted to nurse & not much else for a long time.
Also he hates juice. All kinds. Will only drink milk and water. Wth?
DD is just starting to like juice now at 3.5. She never really asked/cared much about it before now and if it was given to her she'd take two sips and be done.
She thinks it tastes "strong" and doesn't like the way it feels on her teeth. Or so she says.
Now if she asks for it it has to be the Old Orchard 100% juice in some weird flavor (cran-pomengrante etc) and watered down.
She inhales lemon water with ice like the well will be dry tomorrow however.

He won't at eggs (hard boiled, fried, scrambled, egg salad), spits out meat 90% of the time, but he loves steel cut oats, pickles, quinoa, salt & vinegar chips, squash and eats fish?

My niece and nephew are this way. They're 5.5 now and it's getting a bit better but not much. They've been that way since they were born (as babies they liked 2 kinds of puree and 1 brand of yogurt and that was all). They're great kids and still alive but they'll come over and I'll make a great dinner and they say, "Can I butter toast and grapes?"
They are who they are. Don't feel bad.
And there's not much super exotic going on in this house. Liking "adult" food? Sure. Liking "non-normal" kid stuff Sure? Not being overly picky. Yes. Squid with kale sauce washed down with quinoa and ancient acai berries? Not quite.

My girls won't eat potatoes unless it is in french fry form. DD1 used to be an amazing eater. She loved curries, octopus, lentils. She's a bit more picky now and it's annoying.
Odd things they like: frozen peas and frozen edamame (still frozen) and they love fish.
