I usually have a 10 pound range I stay within, but the stress from my mom's health bounced me over my personally set max high. My first goal is betting to that max number. I know if I stayed really strict on my diet I could possibly get to my first weight goal but this is our one camping trip a year so I don't want to lose out on my annual enjoyment of camping food! However, I don't think I'll be happy with myself afterwards if I go whole hog so I'm trying to amend the planned menu a little bit to make it not as bad as usual.
Suggestions for how to modify for a little less calorie/greater healthiness?
Friday Dinner Artisan bread with cheeses, deli meats, & fruit Rose
Saturday Lunch ? I'm at a loss here. I'd like something easy, filling, and mostly healthy. Preferably something that we don't have to bother restarting the camp fire to eat. I don't feel like a green salad is easy to bring camping. It takes up too much space in the cooler.
Saturday Dinner Roasted plantains brats s'mores (and I will probably eat 5!)
What can I add to Saturday dinner? Corn on the cob is basically a starch so I'm not really wanting that. I do plan on making sure we have lots of carrot and celery sticks for snacking on in addition to the usual chips/trail mix.
For our saturday dinner camping last weekend, we had ribeyes, bacon, sweet potatoes and brussels sprouts. The veggies, we just wrapped in foil and stuck them on the grill. I know potatoes will cook wrapped in foil at the base of the campfire. I'd imagine veggies would too.
none of that food even sounds like camping food to me, lol. except the smores.
maybe you can just have more fruit and low sodium deli meat and cheese and less bread. that will be one way to cut things down. remember to drink water. i'd totally bring a salad, it's a light lunch but if you pack some nuts and other things, it will be filling enough. also, i'd totally have 5 s'mores, and feel less guilty about it if i went on a hike or something that day. could you have the brat without a bun? or is it even made with a bun?
also- dinners like bread cheese and meat make me feel the necessity to eat more instead of a piece of chicken breast & veggies. just a thought.
anyway, i agree that if you gain back what you've been doing, you'll think it wasn't even worth it. so be smart, make good choices, eat the food that is best for you in larger amounts and stuff that isn't in small, so you're still feeling satisfied. drink LOTS OF WATER!
Brats aren't camping food to you? We get the precooked one so then it's just an upscale hot dog. Ok, I can understand on the rest though I was thinking of making tabbouli for having for the lunch as I did last year and it was easy and ok calorie-wise.
I do chicken skewers when I'm camping. That way I get my protein and veggies in. It's fun, lol, and it's not a boring salad. Just a thought. And ditto what sarack said about drinking tons of water.
