I'm also making a batch of rhubarb muffins at the start of the week and will have some other kind of muffin for the rest. I'm thinking grapefruit poppyseed. I made apple cinnamon baked oatmeal this morning and we have enough left for breakfast for tomorrow, so that's nice. I love the mixing of steel cut and rolled oats - my kids don't like straight steel cut but will eat them this way.

Wow! Your meals are all ambitious.
We are traveling on opposite schedules this week so only dinners are weds and thurs. We are having a frozen bird's eye voila and cube steak with sautéed onions and mashed potatoes. lol
Tonight: Homemade chicken noodle soup with breadsticks Tomorrow night: Mini meatloaves with whatever sides I dig out of the freezer (I didn't get to it last week) Tuesday: BBQ chicken wings with salad Wednesday: Pork roast, mashed potatoes, veggie Thursday: either a stromboli or some pasta dish with sausage Friday: I have some crab cakes, jalapeno lobster bruschetta and some other apps in the freezer we'll do. Saturday: birthday junk food at my FSILs.
I'm trying to shop only once this week for fruit and salad toppings only.

darnkatz we LOVE that oatmeal from Annie's Eats. I made it yesterday with peaches...skipped the caramelizing step and it was still really good.

Tonight we are having my family over. I'm making minestrone soup, salad, and we are having pesto/sun dried tomato/Parmesan and fig/prosciutto/red onion/Gorgonzola flatbreads for apps and strawberry shortcakes for dessert
Rest of week: Cornmeal crusted catfish, Parmesan grits, glazed carrots Bacon wrapped chicken, mashed cauliflower, wilted spinach and mushrooms French dip sandwiches, roasted sweet potatoes, corn Sloppy joes, tater tots, green beans Ravioli with herb cream sauce, broccoli

DH and I are both craving chicken alfredo so he just went out to get cream and parmesan so we can make it tonight.
I have hamburger and breakfast sausage in the fridge so we will probably do spaghetti with meat sauce tomorrow and sausage with either french toast or waffles on Tuesday.
I'm trying to cut back on groceries and use things we already have, so the rest of the meals will be scalloped potatoes and ham, chicken with pepperoni marinara sauce, crockpot roast, and probably mac and cheese with hot dogs on the night DH has to cook

Tonight we finally used the garlic spinach pasta I've been hanging onto for too long. It was a gift, and it's our fancy local pasta place stuff. Anyway, we had that with some diced tomato and spinach cream sauce off of Pinterest.
Monday: chicken, mashed potatoes and broccoli
Tuesday: enchiladas
Wed/Thurs: not sure yet possibly tacos or fajitas or rice and beans. Those are our go-tos. Maybe veggie stir fry on Thursday.
You all are gourmet cooks. I make nothing noteworthy.
**Please note that anything fancy on my meal plan probably came from a) the grocery store fresh section b) the frozen section at Sam's.
There's very little fancy in this house these days. I love to cook and I cook a lot but fancy it is not.
Don't feel bad and share anyways. I love the simple meal plans the best. Even if it all came out of a box sometimes I get inspired to mix and match things I wouldn't have thought of prior.

My mom's having a knee replacement this week, so I spent much of the weekend bulk cooking for her and my dad, so we're having a lot of that for dinner this week as well.
I did mini meatloafs in muffin tins. The recipe I found used stove top stuffing. I'd never tried doing meatloaf with stuffing, in it, but it was really good. I can't find the link now. It also had a brown sugar tomato glaze.
Pasta Bolognese tonight which I hope makes a lot of leftovers. Chicken enchilada casserole carried over from last week. We ate out way to much recently.

Tom and I did both have leftovers for lunch. I think I may even have had enough for a second lunch, but I can't remember. The recipe claims it serves 4 but those would be some big ass portions.

How did the salsa.chicken casserole turn out? Would it be enough for two adults and a six and a five year olds or.should I double the.recipe?

It turned out well, but I made some tweaks! I used bone-in chicken thighs instead of breast because thighs were on sale. I ended up using 8 thighs, which I seared on both sides before nestling into the rice/bean mixture. I doubled the corn, rice, spices and chicken broth as well (didn't have extra beans or salsa). I had to cook longer because of thighs - around 1.5 hours I think? Super easy, though. I don't think an 8x8 pan of it would have been enough for us, quite honestly - 2 adults, a six year old, and a 1.5 year old who eats like a man. I'd say double it.
All in all, it was delicious. We had leftovers, so I sent some with my husband, which is always what I aim for.
