I think if my parents helped us with a large payment they would be annoyed I spent a lot of $$ on a gift thanking them. I would just take them out to dinner (leaving kids with a babysitter). Or do something for them around the house that they might find difficult to do - cleaning project or something.
I second the dinner gift card idea. I also agree that typing on an ipad is wonky. If I didn't basically re-read my typing as I go, what I'd be sending out would be a disaster.
I'm curious about the logistics of this. Did you draft a contract? Consult a lawyer or accountant? Can you still deduct your interest?

yes, we draw up a legal contract that says mr and mrs toastie owe toasties parents xxx,xxx. They will pay this as a monthly amount with interest rate of x. They are responsible for having home insurance and paying property taxes. There is an addendum of what to do in the case of death etc.
no, we cannot deduct the interest because of the way the document is worded. It is considered a personal loan, not a mortgage so it doesn't fall into the same laws.
This may not be what you're looking for but, what about finding a really nice blank card?(Papyrus) Writing them a heartfelt note expressing your gratitude, what this means to yor family, the boys etc. Take them a dinner with the card and call it a day.

I think this is the best suggestion in this situation. Shows appreciation without being extravagant.
