I have cupcakes to make for ds' memorial birthday dinner tonight. I was planning to take half to our support group on Wednesday. Would they be fine if I baked them today? Should I freeze the half I'm saving (without frosting them) or would it be better to refrigerate half the mix?
Don't refrigerate the mix, it won't rise properly. I think you'll be fine baking them today as long as you don't frost them and keep them in an airtight container.
