whenever i have excess of onions (of any kind, including green, and i usually use a mix/combo), i cook them with sesame oil, rice wine, and soysauce and add thinly sliced beef. although i'm not sure if you can find the super thin beef at non-asian grocery stores.
I bet I can find thinly sliced meat at uwajimaya. I don't eat beef but I could substitute pork or chicken just as easily.
hmm..i'm not sure if UW has it. i don't really shop there. i shop at mostly korean and chinese supermarkets, but it's possible. and yes, chicken works, too. i just usually do beef cause h likes that more than chicken.
another option: chop them up and freeze them in ziplock bags. my mom does this when she chops up too much. they don't hold their shape too well and do lose a little water, so not great if you're going to use raw onions for something, but they're perfectly good to cook with.

Onion pie! I don't have an actual recipe but you cut up a lot of onions. Like 10 or so bc they cook down. Caramelize them in a pan with lots of butter and season with salt to taste. Let them cool a bit and put into a large bowl. Add 3 eggs, a regular size container of sour cream and pour the whole mixture into a frozen pie crust. Top with parm cheese.

Peel one, core the middle, and stuff with butter, wrap in foil and throw it on the grill. Yum.
is this the secret? i always just throw the whole thing (sliced in half) on the grill and it takes DAYS to cook. well. not days. but you know.
Amazing. Def. cooks faster and they're buttery and delicious. We do it camping to, and throw it on the fire ring. I can eat them plain, DH prefers these onions on a burger.
