I made a huge batch of chili last night, put it in various Tupperware and left it on the counter to cool before putting in the fridge/freezer. Then firgit and went to bed. Sat out about8 hours, was very hot at the beginning. Keep or toss?
Does chili boil? I've done that with chicken soup, and just reboiled it for x number of minutes.

Yeah, I think if you can boil it for 10min you'd be ok. I just did a quick search for a few bacteria and I think most seem to die above 65-70C (boiling of water is 100C). The key would be to make sure the meat gets cooked through again basically.
