Friend just had a baby, and we are going to bring dinner over. The H is gluten free. They also have a 2 1/2 year old who still mostly eats with his fingers.
My H avoids gluten. Here are some of our regular dinners:
Tacos or fajitas on corn tortillas Spaghetti squash with marinara and meatballs Stir fry, asian (rice) noodles with peanut sauce, or fried rice (just watch out for soy sauce which can contain gluten) Lots of creamy/hearty soups can be made GF - my fave is butternut squash Buffalo chicken lettuce wraps Roasted chicken legs + baked sweet potatoes and a veggie Big salad with salmon or chicken, goat cheese, dried fruit, and nuts Crustless quiche with bacon, veggies, cheese
If you wanted to do a more traditional pasta/casserole type thing, there are a lot of GF noodles out there that really are not bad. They have improved vastly in the last few years. Just be sure to follow the cooking directions exactly (don't overcook them and often they need to be rinsed right away)
Is he gf for funsies or does he have celiacs? I am celiacs and despite how well-meaning a person is, I almost always get glutened when I eat in a place that isn't my own. If maybe call and ask, if you aren't sure.
