Toast with butter, cheese stick, sliced apple. Boom! My kid is a huge fan of having random snacks for dinner, so when I don't have time to make a real meal, I just go with it.
In addition to PPs' ideas, we do ready made dumplings from the freezer.
msniq's parents would sometimes eat dinner "backwards" aka serve ice cream and then not bother with actual dinner since they'd fill up in ice cream. She had 4-6 kids in the house.
Naan pizza- get the Naan from Costco (can be made frozen), add some pizza sauce and cheese (fun for them to do!) and pop in the oven for 7 minutes. So good and they have fun making it.
Those Perdue chicken tenders are a hit with her. Same with potstickers I get at Costco.

We mostly to pb&j, mac and cheese w/hot dogs and veggies mixed in. Or if we have English muffins around I let them "help" make a pizza with it. Usually just cheese and cut up salami on it and I pop it in the microwave to melt everything a bit.
Frozen peas/veggies & Frozen meatballs. Both cooked in the microwave. Served with a bun or slice of buttered bread and BBQ Sauce or Ketchup for the meatballs.
Chicken noodle soup from a can with added frozen veggies, serve with cracker or toast or carrot sticks.
Hummus wrap... a tortilla topped with hummus, cheese & whatever veggies are in the fridge, roll it up and serve.

will do veggie sticks on the side of all of these (my boys love cucumbers, peppers, carrots, celery). Usually, 3 nights a week are the above meals. We're real gourmands
A rotisserie turkey breast, more meat than a chicken so you get more meals out of it. Raviolis are quick and so is the single serve macaroni and cheese.
We always have easy microwaveable meals in the freezer for DS since I often don't get dinner ready before he eats (he also eats them for lunch).

I also have organic dairy/egg free frozen meatballs that I can microwave in 2 minutes that we do sometimes with a frozen veggie and fruit.
Things like pizza, eggs, grilled cheese/quesadillas etc are all a no go in our house due to allergies so its a little more complicated.
I always keep these things on hand: Deli turkey pinto/black beans fruit frozen veggies like snap peas, green beans, broccoli, sweet potato (I roast and freeze), corn, carrots etc. Sunbutter/almond butter frozen ww egg/dairy free waffles Applegate breakfast sausage coconut milk yogurt Unsweetened applesauce
Sometimes dinner is just a mixture of stuff I can dump on the plates.
Nachos, we always have shredded cheese, top tortilla chips with that and whatever leftover protein (beans, chicken, ground beef, shredded pork) , I will give them whatever fruit/veggies we have around on the side.
They will always do breakfast for dinner too, cereal or oatmeal or frozen waffles with yogurt and fruit.

Bag of frozen stir fry veggies and a packet of Wegmans 90 second rice and quinoa (or rice pouch of your choice).
Veggies in some olive oil and soy sauce, nuke the pouch and mix it all together. Also a great way to get DH to eat veggies.
Fancy version: throw in extra veggies you have laying around and 1-2 precooked frozen chicken breasts. (I cook a whole package in the crockpot, and then freeze in 1-2 breast portions.)
A lot from PP's lists above, but another thing I do is make a big batch of mini quiches (buy the frozen tart shells and fill with a quiche mixture usually containing a bit of meat, cheese, sometimes a bit of a veggie), and freeze in a big ziploc bag. Then I just take out a few at a time for quick lunches/dinners.
cheese, crackers, turkey pepperoni annie's mac/cheese cups - I mix in mini meatballs (earth's best) and peas sometimes frozen nuggets, fish nuggets, meatballs PBJ scrambled eggs cereal/yogurt
Mine eat pasta, breakfast dinner, rotisserie chicken and veg, black bean quesadilla and stir fry on the regular when were short on time. Thankfully, they love fruit and tolerate most veggies so it's a pretty healthy meal.
