So, this is actually day 1 for me. I started last week purging the cupboards, getting rid (aka eating) the remnants of processed stuff, stocking up on better choices, meal planning, etc.
I must say, when there is NO processed food in the house to eat, you dont eat it. LOL. I've certainly realized that for myself, eating well is mostly in the preparation/planning stages - if I buy good food, I eat it. end of story.
For breakfast I've been doing egg white/veggie omelettes that I've premade in muffin tins. So I made a batch, cooked them in the oven, and then I just eat 2 for breakfast with fruit and some tomato. They keep for 3-4 days in the fridge so I only need to make a batch every 4 days.
I pulled out the breadmaker and made 100% whole wheat bread. Its SOOOO good. Crazy though how its almost stale in 48 hours versus store bread which will stay "fresh" for at least a week.
My hardest thing is still condiments - getting rid of ketchup, bbq sauce, etc. SO I've been using fresh salsa that I made on a lot of stuff and for sandwiches on my fresh bread I've used some homemade mayo a friend gave me. Its OK but I prefer my store brought processed stuff.
I made homemade granola bars that are AMAZING. Not low calorie though. This is what i used:
2 cups unsweetened granola (I had to read labels at the Bulk store to find one) 1 cup rolled oats 1/2 cup unsweetened coconut 1/2 cup unsweeted dried cranberries 1/2 cup almonds or another nut of choice 1/4 cup sunflower seeds 1/2 cup protein powder (I'm not sure if this is really allowed) 1/2 cup flax seed, ground
Then you mix all that with 3 tsp cinnamon. THEN in a microwave for 1 minute mix: 2/3 cup natural peanut butter, 1/2 cup honey and 1/2 cup pure maple syrup. Stir, heat for another 30 seconds and then blend with the dry mix to combine well.
Then you press it into a pan and chill. Sometimes you have to add a bit more wet mixture.
Dude, no, you need to go buy some real ketchup (probably not available at the regular grocery store). It changed my life. It's very tomato-y, but it's ketchup! BBQ sauce too..

I'm doing... just okay. I've had tortilla chips almost all weekend. And we were out on Sunday afternoon (our favorite bar was having a beer fest/garden for its 4th anniversary party), so I wasn't eating great.
I've also had a few bags of pop chips, which are dehydrated... potato flakes in a circle shape, basically. Not too good.

Im going out for dinner tonight at a place that uses local ingredients and non-processed stuff. I'm so excited. Even better is that it's normally $89 per person pix-fixe and thanks to a groupon we are paying 20pp.

Meh. Bigger surgery than we expected = harder recovery. Yesterday I had to sit at my desk for an hour to finish up a syllabus to get to my department head who is covering my classes for me Thursday, and one of my incisions split open and bled. Apparently that was pushing it too much. It was an hour!
It has been a LOT harder than I expected, which is really frustrating. I'm hanging in there though! Thank you for asking!

Sunday was my first day. I've been doing really well so far.
I posted my menu in the carb thread, but I def need to do some tweaking to it. I'm still working with how I feel after foods and what I actually want to eat.
As for recipes, I bought the clean eating plan from emeals.com. So far, they've all been excellent. I also read www.canyoustayfordinner.com/ for her recipes. She has a really inspiring story of how she lost 125 lbs. and I'm trying to use her diet as a model for my own.
I'm desperate to lose weight, and now that I'm super motivated I'm finding it pretty easy. My next step is to find a gym to join that has a kids club with Zumba and spin classes.
