This. I used to go camping every summer- we called these Hobo dinners. Meat, cubed potatoes/carrots, cream of mushroom soup- wrapped up in 2 layers of foil. Love them!

We never added soup but I think we called then hobo dinners in girl scouts! You have to add onions. That's key. They get nice and smokey, so anything would probably work well.
Walking tacos. If you don't have a way to cook the ground beef, you can make it ahead before you leave. Buy the individual Dorito bags, crush them up before opening and then add your meat and toppings.
Chicken fajitas! We would marinate chicken and then cook on a grill grate over the fire. Plus, you know, s'mores.
I also really want to try campfire cones next time we go camping. You take an ice cream cone, fill it with choc chips, mini marshmallows, pieces of banana, peanut butter, etc. and then wrap it up in foil and stick in the coals until it gets all gooey and melts. Mmm it sounds so good.

I brought this on our trip last year and it was a huge hit! So easy, fast - and no cleanup- score!
