Prepare one serving of cream of rice cereal, omitting salt. Meanwhile whisk one egg in a small bowl. Use 2 tablespoons of the cereal to temper the egg. Then, add the mixture to the saucepan or bowl you're using to cook the cereal. Add 1/4 teaspoon of vanilla extract (I might use just a bit more next time) and one teaspoon of sugar and simmer for 2 more minutes (I made this in the microwave, so I just kinda went by thickness/texture). Top with 2T chopped peach (or fruit of your choice, strawberries would be good, I expect).
It's pretty filling (for me, anyway). I would expect the egg will help it "stick with you" longer.
Anyway... thought I'd share. It seems like it would take a few more minutes in the morning, but I really don't see why you can't make it the night before and warm it in the AM. Or, for that matter, make a few servings ahead and split them into containers and warm when ready to eat.
