I want to make more dinner main courses featuring eggs as the primary protein. I'm looking for something more interesting than the scrambled eggs with peas and cheese I feed to the bibbleboop.
So far I've considered attempting quiche. Other ideas?

I make simple migas for dinner a lot. Fry/grill some corn tortillas and fold them in half into a taco shape. And for the filling, I will just scramble eggs, black beans, salsa, peppers (whatever you want really) and top with grated cheese and sliced avocado.

Frittata! Like quiche without the crust? I'm trying my first one tonight. It'll have 6 or 7 eggs, onion, bell pepper, peas, bacon, & cheese. We're out of potatoes or I would add them too.

I'm big on frittatas.
I made one recently with pesto and mozzerella in it, and put sliced yellow and green tomatoes on the top before I put it in the oven. It looked pretty and tasted really good.
I'm intrigued by baked egg cups but I haven't tried to make them yet.
Then you've got your casseroles, but now you're moving into heavy carb territory.
I think I missed a joke about quiche, but that was going to be my suggestion. I made one last week with onion, zucchini and cheese. Oh, and quinoa. That shit is amazing.
I made an omelet last night with bacon cheddar and spinach. Then I topped it with a fried egg. It was delicious...the yolk from the fried egg made it all gooey and yummy!

We did wraps with scrambled eggs, KALE and potato hash, and a little cheese last night. Shaksuka has been on my list to try for too many years and I keep forgetting about it.

The local Indian buffet sometimes scrambles them with onion, cilantro, spicy green pepper of some sort, and what tastes like a little garam masala, and it's delicious.

I love frittatas. You can throw anything in those things. They are especially good if you put some honey dijon mustard in the egg mix before mixing in the veggies. Yum.
We do spinach omelettes at least once a week. My meat and potatoes loving man loves this with a sweet chillie sauce on top.
I also LOVE stir frying some zucchini, broccoli, peppers, tomatoes, spinach (really whatever veggies I have lying around) and then pouring in scrambled egg mixture and scrambling it up. Top it with goat or feta cheese and it makes an awesome meal!

I make eggs & chorizo with migas, beans & rice, and tortillas for dinner every once in a while.
Cut some corn tortillas into frito sized pieces and fry until crisp. Cook some chorizo, throw in the migas and then add in scrambled eggs. Cook to your favorite consistency. DH likes this with melted cheese on top but I don't like cheese on eggs. Serve with a side of beans, rice, and tortillas.

We do some sort of baked Turkish egg dish. Diced tomatoes, peppers, spinach and other veggies in ramekins, topped with egg, baked, and served with crusty bread.
