We are considering doing this in October. At first we thought we would maybe just go to Iceland for a week but I see now that IcelandAir has the stopover option where you fly there, stay however many days you want in Iceland, and continue to your destination with no extra (flight) costs. This seems like a pretty good deal to me and I was wondering if anyone has done it.
We did, on the way to London on our honeymoon. It was great. We rented a car and explored for a couple days. Blue lagoon, golden circle, etc were easy to find tours but we wanted to drive out to Jokulsurlon (glacier lagoon, probably spelled wrong).
I have not done that specifically, but I spent 3 days in Iceland two Labor Days ago and it was fantastic and totally worth visiting for even a limited amount of time.
The glacier lagoon is the most amazing thing I've ever seen. Spoiler alert:

That whole day was amazing -- I thought the drive to/from the glacier lagoon was way better than the Golden Circle.
