We have a dairy allergy in our house so we do mostly dairy free. We have been for awhile now, but I still struggle with waffles. We mostly drink almond milk, but almond milk is really thick and the waffles come out like a brick.
Is there another dairy substitute that works better for waffles and pancakes?
Are you making the almond milk yourself? I've never thought it was thicker than cow's milk? You could water it down if you wanted to stick with almond. I like it in baked goods because of the nutty flavor. Otherwise, rice milk.

No we buy it. It's definitely thicker than cows milk. Overall I prefer it over cows milk but this is the one area that has been a pain.
Hav you tried a different recipe or a different almond milk? I always use almond milk in waffles and I've never had this issue. I use a basic recipe from Joy of Cooking.

When I'm doing pancakes or waffles I add 1 tsp of Apple cider vinegar to the milk and let it sit for a few minutes. It makes it mimic buttermilk. I haven't had an issue using soy, rice and almond milk in this way.
But then I just use bisquik. Maybe if I was doing something fancier it'd be different?
