Are you putting it on buns or serving just meat? You'll go through a lot more if it's not being made into sandwiches.
I'd figure 1.5-2oz of meat for a slider bun, 3-4 oz for a normal bun, and probably more like 6-8 oz if people are just taking meat. I bet the catering shop can get you better estimates than that though. Most adults would eat 2 or 3 slider buns, kids probably just 1.
I tend to figure an average of 5 oz per person. People like my husband would eat 12 oz, people like my mom would eat 2 oz. We always have enough with that figure.
ETA: If it's more of our younger guy friends, we go for more like 8 oz/person, since they all eat like my H.
A variety probably - brisket, sausage, turkey and the buns is a good idea. We will make some sides too. I think 5-6oz sounds good per adult and half that for kids?

We have a local BBQ restaurant that has recommendations for bulk orders. For every 5 guests they recommend 1 lb of sliced meat or 1 quart of shredded BBQ meat.

Just order 5 oz/ person, including the kids, and maybe you'll be lucky and have leftovers!!
