We did the Disney Alaska cruise last year. It was absolutely wonderful! I loved that we could take on wine and alcohol with no question. I'm not a gambler, so I didn't miss the casino that's on most ships.
The kids clubs were so nice I could barely get my kids out of them. Absolutely loved the mixology classes.
However, for the prices, if we do a Caribbean cruise, I'm going to consider one of the Royal Caribbean mega ships, as they're about half the price and one of my BFF's has had great experiences with their kids clubs.

Some friends of ours did a Disney cruise last year (Caribbean) and loved it - their kids are older than mine though (12 and 10). It seemed like a nice way to get a "Disney experience" without having to do WDW. That... has a lot of appeal to me, even if it is more expensive than a regular cruise.
I was looking into it recently but DH was in the no way camp since the one we looked at cost 6500 with 2 toddlers in a 268 sq foot room. This was for 2016.
We are booked for WDW and a 3 day cruise in 2016. We were supposed to go this past April but my Mom was super ill and in the hospital so we canceled and got our money back through the insurance. It is more cost wise but they are supposed to be great! I like that they are geared towards families - I don't have to worry about my kids being too loud at dinner, etc. We fully intend on using the child care a lot! My friend recently took her kids on RC and they also had a great time and loved the kids club on the ship - her girls are 5.

We did a 7 night Caribbean cruise with them last November/early December. DS absolutely loved the kids club and insisted on going there for most dinners even. They show Disney movies in a movie theatre, so we got to see Big Hero 6 when it first came out. Great splash pad and water slide. Some of the shows were pretty cheesy but the one DS went to, he loved. Pirate Night was fun, Mickey zip lines from one funnel to the other and there's fireworks while at sea. Their island is amazing, beautiful calm water, cute theming. The food was good but not great, but I think I'm spoiled on food from cruising with celebrity before.
The ships are lovely; the staterooms are the best available in the mainstream cruise market. Food is what you'd get at a decent hotel-based wedding reception. Their private island is lovely. I was underwhelmed by their children's program, but I imagine they've improved it. We had a lovely time, even if we couldn't pay DS to stay in the kid's club.
