I'm so tired of the stuff we usually make and out of ideas that are low cal healthy. The only thing I have planned for tonight is a cabbage apple slaw since I bought the ingredients for it last week and then ended up not making it. Trying to stay away from anything that will heat up my kitchen, bonus points for vegetarian.
I'm doing lemon pepper grilled cod with roasted curry veggies on the gril.
What about making grilled bbq tofu burgers with the cabbage apple slaw on top?
You're cute. Hubby won't eat tofu in 99% of its forms. I can't have seafood. Sigh...I think maybe I found a not too terrible yogurt marinade chicken skewers. Hunting for a lower cal coconut flavored chicken.
Gazpacho!! that's my go-to no heat meal that I learned from my mom. tomato juice, wine vinegar, Worcestershire, EVOO, salt, pepper then a bunch of veggies like green pepper, onion (little), tomatoes (more), green onion, cucumber a TINY bit of garlic.
ETA: we eat it like a soup with tortilla chips and sometimes I make guacamole with it. sort of like 'fancy' salsa dinner
