I've only got one kid to wrangle and not three, but ditto the convenience foods. We have a lot of leftovers or something super quick I can microwave-english muffin pizzas, quesadillas, frozen veggies, etc. Sometimes I'll thaw/cook something like hot dogs, pasta etc so I can grab them out of the fridge and heat up later in the week.
And wine. Definitely wine. Or beer. AJ's new phrase is "Mommy beew/doose (juice aka wine)!" every time he sees a beer bottle or wine glass. Oops.
DH is in the healthcare field and he has quite a few meetings after work because he has to meet with doctors and they are usually available at the end of the day after they see their patients. DH has a meeting tonight, in fact. He will be around for DS1's baseball game from 5:30-6:45 pm and then he heads out to have dinner with a doc. I will head home and finish the night by myself after doing the whole day by myself too. The older kids can handle bath time alone so they will get showers but the younger two will not. We will also probably have cereal or something from the freezer for dinner because we have to leave for the game by 5 pm.
I find that the kids are in bed on time much more regularly when I am solo parenting, too. DH will want to play with them, watch a movie, have a snack, go for a walk, etc. and they end up going to bed late. Quite often I feel like I am counting down the seconds until we hit 8 pm and I send them all to bed. Also, some days I am glad I don't drink because solo parenting might make me a closet alcoholic.
