I wouldn't. What about making an orange cream cheese frosting. It's what I do when I make carrot cake. You could also do pineapple cream cheese frosting.
No pineapple in the cake. This recipe is not overly spicy.
I mean, personally I wouldn't do it. But, it's been done and people like it.
If I were making the cake, I'd make the Magnolia carrot cake recipe and MAYBE put a strawberry glaze on it if you really wanted strawberry and I couldn't talk you out if it.
Now that I think about this some more, I'd much rather have an American flag cake (with strawberries and blueberries) that is carrot cake than some other type of cake, provided the white part is indeed cream cheese frosting.

If it was a cake you were just making for your family, I would say go for it. However, I think most people would shy away from eating it. Well, that would leave more for you, so maybe it would be a win-win?
