Sounds like her speech and imaginary play are coming along really well.
I did modeling in the form of a question/statement back rather than just restating it "properly". So I might say "She's hungry? What does she want to eat?"
Ds1 says "my" instead of "I". As in "my want some juice". It's pretty minor in the grand scheme of things and I figure he'll correct himself soon, as he has with all his other language errors. I just keep trying to model proper pronunciation.

Very, very normal. Just KOKO.
Once DD1 started kindergarten, I started occasionally correcting her grammar -- but I would explain why what she said was incorrect. The majority to the time, I still just respond with the correct grammar to model it for her.
(Her mistakes now are more likely to be irregular past tense verbs or something, so it has improved from when she was 3 :-) )

Nods does the same thing. I casually correct her. She struggles with questions. "Are that the toy?" I'll correct and say "is that the toy? Yes, it is."
A friend told me about his kid who would mix up yours and mine and ended up calling urination my-ination LOL (IDK why they used urination with a 3 year old though)
Sounds like she's going to be ok! lol. I seriously had a tiny sliver of worry this was a sign of SOMETHING BAD.
It's normal at this age.
Pronoun reversals are sometimes noted for longer in kids who are on spectrum. DS reversed me/you until he was about 7 or 8. At the time, his formal evals put his vocabulary at high school level. He reversed ask/tell into about kindie.
