Uhhhh, we're pretty casual, so wherever people want to sit, they sit. I don't think I've ever done a formal meal with three people. Sixteen? Sure, I'll set the table. Three? Not so much.
ETA because this is GBCN, no, my table doesn't seat sixteen. But I have hosted in other places with that many guests. We tend to opt for serve-yourself for the most part at our house .

I'd let everybody grab a seat and that would be that. If I had to make assignments, I'd do couple on one side, H at the end, me w my single girlfriend on the other side.
Most of the time, I use two arm chairs at the ends and two comfy side chairs. I stow the other two side chairs against the walls next to the breakfront.
If it's DS, DH and myself, we usually do end-side-side. If it's dear niece, DH and myself it's the same. Sometimes DS will set the table end-end-side.
We had one of ?H's single friends over for dinner tonight and originally I set the table side-end-side, but I thought it looked crowded to leave half the table open and reset it to two on one side one on the other. Then I wondered if it was weird to leave the head of the table empty.
