Do you have any favorites? We have our stove back but not the sink or dishwasher, so we are eating off paper plates and trying to keep cleanup to a minimum.
Lots of stewed beans like white beans cooked w/onions, celery, carrots, spices. You can add tomoato or potato and serve w/crusty bread. Takes a lot of chopping though. Also stewed lentils - top w/sour cream or something similar. You can add sausage or ground beef to these dishes too.
ETA: Not sure if it's been said but egg dishes too - frittata, omelets, fried eggs. You can use the same pan for bacon or sausage too.

Yup, one pot beans are a favorite here too.
I make black beans about once a week with onion, peppers if I've got them, diced zucchini if I've got them, garlic, tomatoes, sometimes corn. Spices are usually chili powder, cumin, paprika, and garlic powder. Serve on spinach as a salad, over tortilla chips as a taco salad, as a taco/burrito. You can also easily add meat if you'd like that.
One of DH's childhood recipes uses onion, celery, kidney beans, and tomatoes served over pasta or rice. Technically it's two pots but I often use leftover rice or pasta for the base. Spices are similar to above but with a touch of cinnamon as well. We top it with shredded cheese. It's similar to a Cincinnati chili/skyline dish.
