my favorite thing to do with truffle oil is to roast cauliflower in a little evoo and S&P and then at the end I drizzle a little truffle oil and sprinkle with parm.
I recently had a bunch of apricots that were about to go bad. I cut them up and put them in a pan with a little sugar, a bit of booze (I can't remember what...brandy maybe? or amaretto?), a vanilla bean, and a pinch of saffron and let it simmer for a little while.

With Saffron I like the idea of a Paella--I always make a saffron and shrimp risotto with saffron. So similar, but totally different, haha.
