quesyrah, my chicken picatta recipe is from The Barefoot Contessa. I take four chicken breasts and slice them in half (so they are super thin). Then I dip them in flour, then egg, and then Italian breadcrumbs. Brown on each side for 2 minutes. Bake at 400 degrees until they are juicy--usually 15-20 minutes.
While they are baking melt one tablespoon of butter on the stove. Add 1/2 cup of white wine (or chicken broth). Add the juice from 4 lemons and place 4 lemon halves into the sauce. Cook until reduced by half. Add 2 more tablespoons of butter to the sauce once it's off the heat. Spoon the sauce over the chicken and serve!
