No such thing. We have tacos/burritos/enchiladas/quesadillas or something similar every week. We never tire! Even when no one feels like cooking, we hit up the local taco truck. Mmmmmmm tacos.
But tacos are much better for weeknight dinners, both from time and health perspectives.
Enchiladas don't take a lot of time. You can even make ahead and chill until the night you want to cook them.
Frying the tortillas and rolling them all is kinda time consuming. Also, the amount of oil that goes into a single batch of enchiladas is a little horrifying when you start breaking it down.
So I cook up my chorizo bacon and add eggs. While that cooks, I heat the burrito-sized tortillas on the cast iron. Add some salsa to the egg mixture. Put cheese in tortillas. Top with chicken chorizo bacon and eggs.
Now I want tacos! I go to this little hole in the wall place called Rico's Tacos. They make the best super carnitas tacos. Two corn tortillas, melted cheese, beans, meat, salsa and fresh avocado.
I picked special tortilla because I liked that category best.
But, no, peak taco does not seem like a thing. I'm pro things eaten with tortillas, though. Or just the warmed up tortilla.
A fluffy flour tortilla with butter is truly one of the world's most underappreciated delicacies. I know that kapoentje has my back on that one.
Stone cold fact: there are few things in the world better than a freshly made, still hot, fluffy flour tortilla. Soft, edible perfection. Most* grocery store flour tortillas are rubbery tragedies.

I have found acceptable ones, but they are just that - acceptable. They are vehicles for filling rather than the true glory they should be.
The tortillas I ate on my Austin trip last year were just amazeballs.

The taco truck guy who comes to our office is in Mexico until October. The wailing that went up from the crowd could be heard for a block, I'm told. I miss taco Tuesdays. *sniff*

lol yes, I know this is ridiculous - BUT: my H is gluten free, and grocery store corn tortillas are little discs of sadness and remorse. We used to live in Texas and had a local place that made the best tortillas, but then we moved. Out of desperation we bought a tortilla press and make those bad boys in our cast iron skillet, and OMG. It isn't nearly as hard as I thought, and they are SO. GOOD.
That's as far as I go towards authenticity however, because I am a noted cheese whore and cheese makes everything better.
