I am Mexican and I disagree with his taco definition. I grew up in the north part of Mexico and flour tortillas are more common than corn. You can put cheese in tacos, it just the Mexican melty kinda cheese. And a quesadilla is cheese and tortillas, if you add anything else then it is a taco (quesadilla disagreements are very common between Mexicans). Oh and an enchilada does not have any sauce or meat, just panela cheese..

I have British and German roots and grew up in a small town in the Midwest, so I didn't have anything close to authentic tacos until I was in my mid-twenties and my friends from CA found semi-authentic tacos in the Bronx.
I love any kind of tacos that are vegetarian. I'm fully aware that Taco Bell is about as far from authentic as you can get, but there was one a block from my law school, and I realized it was cheaper for me to get lunch there every day than to make my own. No peak.
Maybe you could switch it up? Have you had this recipe?

1) Did you see my post about all the varieties of tacos I make? I mix it up!
2) I do not like cauliflower. Yuck.
3) I'm working out a ton and trying to get a lot of lean protein so while I may add in beans or mushrooms to stretch meat farther, most of our dinners at least need a little chicken.
We eat burritos like 2 nights per week, and I am not even sorry. Jackson is obsessed with black bean burritos (among other ingredients in his burrito). I am also not sorry if that is not authentic because he eats it and it's easy, and that's all I care about.

I know Tex-Mex enchiladas are different from what they are in many regions of Mexico, but again, they are still nothing like the abominations that a lot of people consider "enchiladas."

I will eat almost any variety of taco, enchilada, or fajita you put in front of me. I don't care what you do or don't put on it assuming it's some variety of beef, fish, pork, or chicken, along with lettuce, tomatoes, cheese (yes always cheese). I don't care if it's the midwestern variety, authentic Mexican, or the Chi-Chi's Mexican platter brought to me in a poorly lit restaurant decorated with pinatas for some weird reason. I will eat the Mexican food. Can I drink a Margarita with it? If yes and there is cheese on it, I'm a happy camper. If yes, but no cheese, then I will be a little sad, but give me enough Margarita and I can get over it.
*pearl clutch* the best part of any big Sunday or holiday meal is the greens. I can eat all of the greens.
ETA: Collard greens. As I said earlier I do NOT like or eat turnip or mustard greens
Northern white girl checking in here. I don't believe I've ever had any type of greens. I assumed collared greens were a particular vegetable and you could make them any way, but I'm gathering I'm wrong lol! So, what are "greens"? Is it like when my MIL (who's from Louisville) cooks green beans or kale in a put for 3 days with bacon? Or is that something else? Those are her special holiday dishes.
