I want to make Mac and cheese from scratch - I have done it before but I want it to taste more like 'white cheddar' boxed Mac and cheese than 'regular' boxed Mac and cheese. Is the only difference ACTUALLY using white cheddar??
I like to get the sliced white American at the deli when I have time to wait. It has the right texture and we just chop it up. I usually use extra sharp white cheddar with it.
The best from-scratch Mac & cheese I've made is from a recipe in the book "The Best Recipe." I'll have to poke around and see if it's on line somewhere, but it's really gooey and cheesey and I think that the secret is using evaporated milk instead of regular milk. You can make it with whatever cheese you want.

That's the one I use. I wouldn't say it tastes like white cheddar, but it is delicious.
