We just decided to have friends over for dinner tomorrow night. I thought lasagna would be a good choice because I could prep it tonight and garlic bread and salad would make easy sides.
I don't make lasagna often and when I do it's usually just thrown together and the results are a mixed bag. I have to go to the grocery store in 2 hours so I am counting on you guys to give me a killer recipe. No vegetarians and the only limitation is that MH doesn't like mushrooms. Non-lasagna baked pasta recipes are also acceptable.

Ingredients:
1 pound ground beef
1 medium onion chopped
Sauce Ingredients:
1 can diced tomatoes
1 medium sized can tomato paste (or two small ones)
1 can mushrooms (or fresh) if desired
Salt and Pepper to Taste
Oregano to Taste
Garlic to Taste
1 Bay Leaf
Cheese filling: mix together
1 15 oz. Container of Ricotta cheese
1 cup of grated parmesan cheese
1 egg
1 lb. Grated mozzarella cheese
6-8 lasagna noodles – depending on size of pan - boiled -
Brown meat and add onion, cooking until onion is transparent
Add sauce ingredients stirring and possibly adding a little water to keep from over thickening
Blend Cheese filling.
Spray bottom and sides of lasagna pan with oil
Add 3-4 cooked lasagna noodles
Spread ½ cheese filling
Sprinkle ½ mozzarella
Cover with ½ sauce
Repeat this step.
Bake in 350 – 375 oven for 45 minutes to 1 hour or until bubbly. Serve hot.
You may want to place a cookie sheet on the rack below the baking lasagna to catch overflowing
sauce.

ETA again because I deleted what I wrote initially. This is my mom's tried and true recipe. I haven't made it in ages because boiling those noodles does indeed suck. I want to try it with the no boil ones because I haven't eaten this in ages and it is my favorite thing ever.
Bit I use the no boil flat noodles. They're actually really good.

I also approve of 2curlydogs eggplant parm contribution (despite it not being a lasagna). However, since spinach gives me the runs and I don't really like tofu, I am over here at that vegetarian recipe.
This is my absolute favorite recipe and it's been a hit every time I've made it. As I love goat cheese, that helps. It is a bit time consuming but totally worth it.

My husband hates ricotta cheese, because he's stupid, so I have to make indv lasaga one with ricotta, anyway, I've been wanting to try this recipe....www.skinnytaste.com/2015/01/lasagna-soup.html

Well, I was cleaning out my freezer today and found some leftover lasagna from July 2013 (homemade, and yes, I date all my leftovers) and it was really good. Whatever recipe you use, OP, just be sure to put fresh parsley in the RICOTTA. It makes all the difference.
