Mine is nothing fancy and not really a recipe, but my favourite thing to make is a beef roast.
- Take a beef roast and sear it on all sides in a pan with a bit of oil and seasonings (I use salt, pepper and seasoned salt).
- Put it in the slow cooker with a couple of bay leaves, some halved potatoes, and a bunch of carrots (I usually just peel and cut them in half lengthwise so they fit). You could add some sliced onions too but I usually don't.
- Add 2 cups of liquid. I usually mix up a beef broth cube with 2 cups of boiling water.
- Cook on low for 8ish hours. At the end, suck the juice out with a turkey baster, put it into a pot, and thicken with a bit of corn starch mixed with water to make the gravy. (Alternately, you could remove the meat and veggies to a platter, and just pour the liquid into the pot).
My favorite beef on a bun is one that works well if you have any left over roast beef. Forgive me for not having exact measurements, I just dump stuff together. Shredded roast, can of tomatoe soup, small bottle of BBQ sauce, 2 tbsp soy sauce, 1tbsp chopped garlic, 1/2 cup water. Mix well.
Another one we like is cranberry chicken. 1 can cranberries, 1 envelope of onion soup mix, 1 8oz bottle of Catalina salad dressing. Mix together and pour over chicken.
