I just messaged one of my former coworkers and asked for her recipe....we both were bartenders in an Irish bar in Spain and the sangria she used to make was amazing. (and amazingly strong too) I'll post it if/when she gets back to me....
One thing I do remember her doing - she would make this concoction of liquors mixed together for the sangria (rum & brandy and I believe a few others - maybe triple sec) and keep mass quantities of this in a big jug that way it would be ready to go whenever someone would order a pitcher of sangria. So they would order it, she would pour a bunch of that into the pitcher, along with wine, some fruit and I think she used to put 2 small bottles (like a can's worth) of either club soda or lemon/lime soda.
Hopefully she messages me back because I actually would like the recipe too....lol
Sugar (maybe 1/2 cup?) a few ounces of rum a bottle of red wine about 2 cups of orange juice (I eyeball, maybe it is less than that) cut up a bunch of citrus fruit fill the rest of the pitcher with sparkling water
1 lemon 1 lime 1 orange 1 1/2 cups rum 1/2 cup white sugar 1 (750 milliliter) bottle dry red wine 1 cup orange juice
Add all ingredients to list Directions
Prep 10 m Ready In 2 h 10 m
Have the fruit, rum, wine, and orange juice well chilled. Slice the lemon, lime and orange into thin rounds and place in a large glass pitcher. Pour in the rum and sugar. Chill in refrigerator for 2 hours to develop the flavors. When ready to serve, crush the fruit lightly with a wooden spoon and stir in the wine and orange juice. Adjust sweetness to taste.

Okay - coworker just got back to me. She said she can't remember exactly how she did it, but off the top of her head:
"We used to mix a lot of liqueurs like gin,vodka,cointreau,a bit of granadina (grenadine),rum...so u put a bit of that mix in the jar full of rocks (ice), a small bottle of red wine an other one of white wine, and Orange juice"
