I'm irritated at the ILs over holiday plans and I can't decide how irrational/immature I'm being. We can't make it on Christmas Day, so we are going over New Year's. My family made plans around our dates while the ILs did not.* We figured that would be the case and weren't expecting anything from them. But now we're getting the whole spiel about how since we are spending "Christmas" (which isn't even until Jan 3) with my family, we have to do Christmas (the real day) with ILs next year. And I'm irritated that they can't just be thankful we will be in town for 6 days/5 nights.
*They did postpone the immediate family gathering date to accommodate SIL and BIL last year, but they are always more fawned over than us.
It's after midnight in Denver, so I'm in the safe zone.
Today will be the first full day of my own business.ย

It's 8:20am here in London. ย I'm happy because I'm getting my monthly beer delivery today.
Monthly beer delivery sounded awesome.
And then I remembered that one of my dog's favorite walks is over to the local beer store, which allows dogs. She gets a walk, I get beer, and she knows to sit at the counter and they'll hand her a treat!

Last night I made fish cakes. But instead of using bread or whatever as the binder, I used potatoes.
OH.MY.GOD. CRISPY FRIED POTATOEY HEAVEN.
tell me more about this. I'm assuming this is a "a dash of this, a sprinkle of that" type recipe, but give me a rough outline.
4-5 Russet potatoes 1-2 lbs white fish like cod or such. I actually am not sure how much. I just got a large package from Costco white wine lemon juice (I didn't have any. used lime) 3 tbsp butter Dijon mustard 2 egg yolks spices of your choice any other filler you'd like to throw in - mushrooms, chopped onion, whatever. olive oil & butter for frying
Scrub the potatoes and put in a pot. Cover with cold water and a healthy dash of salt. Boil whole for 10 minutes, then pour off all but 1". Boil another 20 minutes (do not peel, do not poke. They will turn into a mushy mess otherwise). Drain off remaining water and peel while still hot. I used a spoon. Put in large bowl and mash immediately with a fork.
While potatoes cook, toss fish in a baking dish with about 2-3 tbsp of butter, plus white wine and lemon juice. Poach in 350ยบ oven about 20 minutes. Remove from oven when done. Put poached fish in with the potatoes and let cool. Put the poaching liquid in the pot you used for the potatoes and boil until reduced by half.
Add mustard, egg, reduced poaching liquid, salt, pepper and any other items to bowl. Mix together, breaking the fish up into chunks but not too small. Shape into patties and refrigerate for about an hour to firm up.
Heat large skillet over HOT heat. Add butter and oil and heat to smoking. Add cakes and fry both sides, about 2-3 minutes. Add butter and oil as needed to fry all the cakes.
My mom just turned Pioneer Woman's cooking show on. She's now grumbling at the TV that this woman doesn't know anything about cooking, because she's got a tiny little pie to feed twenty people. I can't stop laughing.
I somehow managed to snap an underwire in half, and didn't notice until it was poking me in the chest and I was bleeding. So I pulled the broken one out, and now I feel like I'm walking around looking lopsided.
