We have friends passing through town on Tuesday. The woman has always been vegetarian but has recently stopped eating dairy. We eat vegetarian meals quite often but most of my go to meatless meals are not vegan. I have found some recipes online but I would like some options. Thanks.
I love the book Veganomicon. I checked it out at the library a few times before I decided to buy it. I can make recommendations for specific recipes if you're interested.
My neighbor has Isa Does It by the same author, which she likes even better.
Oh and I make this at least once a week. I use the Barilla orzo in the blue box and Pomi diced tomatoes if I can't find whole roasted in the can. I use regular oregano cuz I've not taken the time to look for the fancy one.
I like it a little thicker, so I use 2 cups orzo, 2 cups tomatoes (or one box Pomi), and only 4 cups water. You can always add more water as it cooks. That makes enough for 4 hearty servings.
We've added other veggies and vegan sausage to this (we love Field Roast or Uptons), as well as vegan cheese (Daiya) when we've wanted to switch it up, but it's a great base recipe.
- Panzanella salad - Pasta with pesto (make your own so it's dairy free) and blistered tomatoes and/or artichoke hearts - Chili is good and easy. Use either beans or the boca crumbles/Beyond meat crumbles and throw it in the crockpot with any other chili ingredients or even a jarred chili starter. I use the Rick Bayless chili starter and I swear you can't tell the difference. Serve with tortilla chips or vegan cornbread.

I have the previous book, Vegan With a Vengeance, as well as the Veganomicon. Both are great. I need to make some chickpea cutlets soon.
I'm not vegan but our vegan friends have served us vegan chili a few times and it was delicious. They make cornbread by using TJS cornbread mix with soy milk and flax & water for the egg and it tastes just as good.
When we had them over last I think I made a stir fry.
While I eat meat, if I am eating or cooking without it I prefer to not use fake meat products, so focusing on things that are just veggie/grain bases.
I also had a recipe for a spicy stew cooked in a pumpkin which I never made but it looks good. I don't have the recipe here but this looks similar obviously without the cheddar!
For desserts I've made an apple crisp or an apple galette using a regular recipe and instead of butter just use the vegan butter, earth balance I think it is. and/or vegetable shortening
