Our garden is producing quite the volume of tomatoes, and I'm feeling a little overwhelmed.
I know I want to make some sauces and freeze some, but what recipes do you like with tomatoes? I want to eat more fresh ones before the season is over.
This isn't a recipe, but I love to make "salads" with either quinoa or orzo or couscous and chop up a fresh tomatoes, cukes, add either black beans or chickpeas, etc and toss with some balsamic vinegar and olive oil.

Oh, if you have any fairly firm varieties, I made an awesome tomato-basil-goat cheese omelette the other day. SO good. Cut them, salt, and put on paper towels for a few minutes before cooking to get out excess moisture.

Toss together/layer some tomato, mozzarella (you can even cut up string cheese, but it's not quite as delicious). Top with pesto and drizzle with balsamic vinegar. Eat
We have sooooo many tomatoes as well! We have made Salsa, eat them plain with a little salt, put them on burgers and sandwiches, used some of them in misc. recipes.

My husband is eating a bowl full of the baby tomatoes and the squishing sounds are going to make me hurl.
Also, he takes a bite of a tomato, dips it in SUGAR and then eats it. I told him if he sucks one more tomato I'm going to make him eat them by shoving them in his ASS.
