You should brine it. Lots of good recipes and fool proof so it will not get dried out. Plus it's an explosion of flavor. Also as scary as or sounds soaking in salt water over night, it does not get salty.
I use a bunch of dry seasoningskin (pepper, Italian seasoning, salt, Bay leaf), fresh onion and garlic, lemon juice, and beer in the brine. So good. Just make sure your brine is completely cool before adding in Turkey.
I heard you shouldn't brine a frozen bird, as they already have salt solution in them and it doesn't work well. You need fresh to brine.
Interesting. I do fresh anyway because I am always nervous I wouldn't have thawed long enough and it would be frozen the morning of lol. Plus I buy it only a couple days before.
