I know, I know. We've done a bunch of these threads. But I keep changing my mind. If you are still interested in talking about turkey day, what are you doing and what are you still deciding about?
I'm thinking of putting bacon into my cornbread stuffing this year. I finally snuck the cornbread stuffing onto the menu (instead of our 'traditional" gummy salt mush) and I want to do it up right.
Other dishes: - dry brined turkey - cranberry/orange food processor relish - Costco's mashed potatoes - Whole food's gravy (possibly dressed up with madeira) - green beans/shallots/fennel (still open for discussion) - sweet potatoes with spices and sorghum molasses (I can find the sorghum molasses) - pecan tart - mom brings a pumpkin pie
I'm so glad my family splits it up enough that we each just make a few things. I was put in charge of sweet potatoes. I want to make chipotle scalloped sweet potatoes (yummmmmm) and asked if we *really* needed the traditional candied yams. Half the family is on a diet, yo. But the answer was a resounding yes. So I guess I'm doing both.
Same thing happened to my cousin who wants to make garlic mashed califlower. Apparently people will riot without mashed potatoes.
So we're having a Thanksgiving full of yummy alternatives. Lol
I'm doing pretty basic dishes, since it's just us and another family: turkey, mashed potatoes, stuffing, green bean casserole , rolls and apple pie. My friend is bringing other veggies. We need a gluten-free dish for her son, so I'm looking forward to trying this dish: www.cookinglight.com/food/recipe-finder/gluten-free-side-dishes/gluten-free-baked-apples
I am hosting. MIL kind of messed things up, so she is helping. She is bringing: GF stuffing Regular stuffing Mashed potatoes Pumpkin pie
I am making: Maple and bacon roasted brussels sprouts Steamed green beans Roasted broccoli Roasted butternut squash with pecans Brined turkey breast Brined whole turkey Gravy Cranberry sauce Crescent rolls Costco pumpkin pie Costco apple pie DD and I are constructing a "turkey" out of bundt cake and gf cupcakes (chocolate icing and reeses pieces as feathers)

We're just doing Thanksgiving at home (me, H, our toddler, and our baby), so we're not making a ton.
Brined turkey- I'm thinking of buying one of the pre-made brines from William Sonoma to save time. I'll cook it using Bon Appetite's sage butter-rubbed turkey recipe, but I'm going to use Alton Brown's heat method. I'll also make apple cider gravy.
Extra buttery mashed potatoes from Bon Appetite Canned cranberries (my H's favorite...me, not so much, but it's one less thing to cook) Bon Appetite's "Simple is Best Dressing" Pumpkin pie
I'm considering making slow-roasted green beans too, but we'll see how much time and energy I have. The baby will be one month old on Thanksgiving, so I'm trying to make everything as easy as possible for myself since I'm getting no sleep these days.

Not sure what my parents are making for the main dish as none of us are turkey people. Hoping its prime rib or brisket. Mom will have me do the mashed potatoes and I'm bringing pumpkin cheesecake.

DH is handling turkey, stuffing and gravy, and he always makes a loaf of bread from scratch, which is one of my favorite things. Plus he'll do potatoes (both mashed with lots of milk and butter, and some made with chicken broth for me).
I'm making:
- brussels sprouts w/bacon - cranberry sauce -- I'm going to do two versions, one cranberry-orange with Grand Marnier and one without. The bags of cranberry were BOGO, so I may as well make both. - pies: pumpkin and apple. I'm using Cook's Illustrated recipes for both. The pumpkin is going to be interesting, it calls for no cloves but fresh ginger and candied yams along with canned pumpkin. And I'm going to do a double-crust for the deep-dish apple.
We have another family coming over to join us, which we're looking forward to -- normally it's just our little family for T-Day and we actually have guests this year!
Turkey Brussels w/bacon Mashed potatoes Green bean casserole Roasted acorn squash All of the above is gluten free And regular biscuits for the kids.
Should I do sweet potatoes too?
It sounds like you have plenty and you already have the squash.
Do *you* love sweet potatoes? The only reason I keep making them is that I personally love them. Over the years, I've got a combo I like. (peeled, sliced, and baked with butter, sorghum and a bunch of spices. emphasis on cardamon instead of cinnamon).
mofongo and gummybear: how many people are coming? I'm tired (and hungry) just reading those menus. I'm only cooking for 9 or 10 (well, 7 adults, 4 kids).

Well, I overdid it last year, we were 6 adults and 2 kids. My dad was very sick and didn't really eat. Turkey was small, so not too much leftovers with that once it was split up, lots of sides. Kids are finicky and probably only ate mac n cheese and turkey.
lol. I'm an idiot because I misread it that you were bringing all those things to your aunt as well as her cooking. So, yeah. Your menu alone was ambitious but not insane like I thought.

16. I'm Italian so I'm classic "overdoer" when it comes to food. I'm having lots of veggies bc FIL and two of my BILs are on this weird diet where they eat mostly produce to cleanse. And MIL and One of my nieces are celiac, so we need GF stuff for them.
But mostly I'm psychotic paranoid about not having enough food.
