ETA: And I have an irrational love of spritz cookies.
We are making my great-grandmother's recipes: cut-out cookies with dough made from scratch and homemade icing, pinwheels, and molasses cookies. The last two are Italian cookies (my great-grandmother was from Italy). They are DELICIOUS. My grandma always used to make them for me when I was little.
I don't have the recipes yet though. My mom is mailing me my GGM's original handwritten recipes through the mail, which is really cool.

I will make maybe 2 of these this year. But my child-free, extra time on my hands list in previous years was:
Peanut butter blossoms and/or reindeer Pizzelles Cracked sugar cookies Snickerdoodles Baklava Caramels Rolo pretzels Rice Krispie treats decorated with frosting to look like presents
I feel like I'm missing a couple. I usually made about 10 things. Then my mom makes regular shaped sugar cookies, gingerbread men, spritz, chocolate chip, mint chocolate chip bars, divinity, cornflake wreaths, and regular peanut butter cookies and we combine to make badass trays.
I make "fancy" chocolate chip with brown butter and sea salt, peanut butter, and sugar cookies. I still haven't found an awesome sugar cookie recipe. I try a new one every year and I'm never satisfied. Anyone have one?

Last year for a Christmas party I made red velvet sandwich cookies filled with white chocolate frosting. They were amazing and looked very festive. And the cookies were easy because it's a cheat recipe that starts with a box of red velvet cake mix.
Be careful not to overbake. In fact, the batches that I took out extra early were the best. If you think they're not quite done, they're done.
Here's the frosting I made instead. It was to die for. Would also be amazing with oatmeal cookies. Or shoe leather. I added quite a bit more powdered sugar so that it would be firm.
eta: I also make these every year. And I'm laughing at myself because I knew I had posted this recipe here before. Turns out I rec'd both of these cookies the last two years in December.
Gingerbread Cookies
1 C Granulated Sugar 1 C Grandma's Molasses 3/4 C Unsalted Butter 1/2 C Hot Water 2 Eggs 1 Tbsp. Baking Soda 1 Tbsp. Ground Cinnamon 1/2 Tbsp. Salt 1 1/2 Tbsp. Ground Ginger 6 C All-Purpose Flour
Preheat oven to 350 degrees. Combine first four ingredients, rinse molasses out of cup with the hot water. Add the eggs and mix. Add the rest of the ingredients and mix well. Refrigerate dough until firm. Roll out and cut with a cookie cutter. Bake at 350 degrees for 10 minutes.
It gets tough to combine all the flour even with a stand mixer, so I usually end up dumping it onto the counter and hand kneading it after the last cup of flour is in. Also, you don't want to over or under bake. Rule of thumb for me is to set the timer, then take a look when it goes off. If the tops are still glossy looking, bake for an extra minute or two. If they're matte, they're ready to take out.

This is my all-time favorite snickerdoodle recipe. It works well as a sugar cookie, just omit the cinnamon.
eta: I've also been meaning to try these... Another snickerdoodle recipe, but I bet it would be good as a sugar cookie. It's similar to the other recipe, but there are a couple minor changes and I think these bloggers are pretty great. I bet the cookie is delicious. MrsAxilla
