Weekday am I missing about spritz cookies? They're fun to make. Not so good to eat
Hmmm, I'm guessing you haven't had really good spritz cookies. They are one of my favorites. Of course my family recipe is handed down from my German great-grandmother (and was her mother's recipe and so on and so forth) so maybe it's slightly different than others out there. And the key to the color is to make streaks with a toothpick in the dough once it's fully mixed. The cookies will come out of the press with a marble like effect.
I have my great aunt's finicky pain in the ass cookie press and every year I contemplate getting something newer and nicer but never bother because I only use it once a year. If I don't make approximately 9,000 cheese cookies every Christmas DH and my sister may stage a coup run away with the tree and all the beer. It's not a risk I'm willing to take so I happily make zillions of them.

Can I get some of ya'lls spritz cookie recipes? I used to make these with my mom and I have her old metal press (with all the fun inserts) but not the cookie recipe.

Not traditional cookies but these cheese straws are a non negotiable Christmas treat in my house. I just treated myself to a new cookie cannon today and I'm looking forward to making these.
1 stick of butter 2 cups shredded sharp cheddar cheese 1 1/2 cups flour 1 tsp salt 1/2 tsp (or more to taste) smoked paprika
Preheat oven to 300. Dump everything into the food processor and blend until smooth. Scoop dough into a cookie press fitted with a small star tip and pipe stars onto an ungreased cookie sheet. Bake 10-15 minutes until lightly browned remove to racks to cool.

These sound good. I don't have a food processor - would manually mixing work?
You could but it would take forever. I've done it with both a hand and stand mixer in the past with success if you let the cheese warm up to room temperature and soften a bit.
