I don't eat Skittles/Starburst often, but if I do I start with the colors/flavors I like least (red, yuck!) and work my way towards my favorite -- orange, lemon, and most of all lime.
Usually I'll grab a handful and sort into pairs/groups. It can be done as one of each color, or, say, two of each color, but never all the same color. The largest pile gets eaten last. This sounds reallllly OCD typed out.
I make pyramids with the colors. Like 4 reds for the base, 3 greens, 2 yellows, then 1 orange on top. Then I eat them from the top down, as to not mess up the color pyramid. Once there aren't enough of each color to make a pyramid, I don't eat anymore skittles. I've eaten them that way as long as I can remember.
After typing that out, I feel like a crazy person.
Yes. And I generally look for "perfect specimen" candies to save for last. So if I'm eating a bag of M&Ms at my desk, I pour them all out, immediately eat any broken or chipped ones, sort the remainder by color, and flip them all over "M" side up. Any that are missing M stamps entirely get eaten. Then I try to get the quantity of each color equal. For example, if I have 8 red but 5 each of all the other colors, I immediately pick the three "weakest" red M&Ms to eat (half stamps, misshapen, etc.). From there, I eat one of each color until I am left with one of each color that's the most representative of a perfect M&M. I then compare those last five and pick a "winner" based on either my own color preference or it being exceptionally perfect. It gets eaten last.
No, I'm not kidding. Yes, my friends make fun of me for this.
If they are flavored, it's a must. I have to eat all of one flavor before moving to the next. If it's just a coating, like M&Ms, I usually will dump out the bag and sort them. Then I either eat them in color groups, or I group them into color combinations that I like. Like I always think the blue and orange ones look good together, or red and yellow

Yes, I color sort my skittles and then eat them in pairs (of the same color). I eat them least favorite to most favorite, which would be: purple, yellow, green, orange, red.
I don't like Skittles, but I would do this with M&Ms when I was alone at my desk. First I sort by color, then if there's a color that only has one or two, I eat those first to get them out of the way. The rest I eat in matched-color pairs. If some colors have odd numbers, I pair two non-matching M&Ms by which colors go best together. For example, yellow goes with green better than it goes with brown.
If I'm not alone, then I just eat them a few at a time with no regard to color.

I do pyramids too, but I eat one of each color, so that I can make smaller and smaller pyramids.

I eat Kit-Kats by breaking off each bar, biting off the ends, nibbling off the sides, eating off the top and bottom layers, and then finally eating the middle wafer layer. If the middle wafer layer breaks in the process I get quite sad.
So no one does mixed pairs? I sort so I can do cherry-lemon, lemon-lime, etc.
Only after I run out of same color/flavor matches. But they must be eaten in pairs, one for each side of my mouth. I hate it when there is an odd number.

I'm the same way with my kit-kats. I've never seen anyone eat them like me.
As for sorting, if there's a bowl of MnMs or skittles, I pick out one color and only eat that, then I work my way on to the next color. If there's blue, I eat that first. Everything else is just random.
As for Starburst, I eat my favorite first - red, orange, lemon, then pink.

same but opposite....lemon (yuck!) goes first then orange and then pink and red are toss ups. With skittles I know purple and green are of the first to go too.
