Any recipes you'd recommend on the savory side, like an egg casserole/quiche? Bonus points if it reheats okay in a microwave, or is okay to eat at room temp (I can bake that morning, but my commute w/ daycare drop off will take about 45-1hr). Only need to serve about 6-8 ppl.
ETA: This for an informal work breakfast on Xmas eve, hence the reference to work and my commute :-)
Brown a pound of sausage. Cut up a can of butter biscuits into 8ths and scatter on bottom of 9x13. Cover biscuits with cooked sausage Top with bag of shredded cheese Whisk 8-10 eggs, 1/2 cup milk, salt and pepper in separate bowl Pour egg over biscuits/sausage/cheese Bake at 350 for 35-40mins
Thanks for posting this. I was just thinking I need to make a list for the Christmas breakfast we host.
Also sausage balls are super easy to make ahead. I make them and freeze them in freezer safe bags. I put them in evenly so they freeze well and easy to quickly put on a baking sheet and bake first thing in the morning.

This is the bomb. Assemble the night before, bake in the morning. It reheats beautifully and is just fine room temp! (you can totally omit the mushrooms and use cream of chic if you desire)
Ingredients
1 lb. Bob Evans Original Recipe Sausage Roll
21/2 cups seasoned croutons
4 eggs
21/4 cups milk
1 can (101/2 oz.) condensed cream of mushroom soup
Spread croutons on bottom of greased 13" x 9" baking dish. Crumble and cook sausage in medium skillet over medium heat until browned. Drain. Spread over croutons. Whisk eggs and milk in bowl until blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight. Preheat oven to 325F. Bake egg mixture 50-55 minutes or until set and lightly browned on top. Garnish with herb sprigs and carrot, if desired. Serve hot with picante sauce, if desired. Refrigerate leftovers.
