I don't think I have a down and dirty must see - there's so much!
We go to all 4 parks every time we go, but we go every few years for 7-9 nights. I'd rather stay longer, do more and have more down time.
If I was skipping a park, it would be the studios because there's so much work being done, there isn't a lot to do. If you have s park hopper, though, I'd still spend a few hours doing a few things. If you don't have a hopper, I'd consider skipping it.

I'm taking my kids for their first trip this year. We've talked about the parks and they've watched the planning video. They have certain characters they want to see and rides they are looking forward to.
IMO, some of the classic rides and experiences are "must do:" Small World, Haunted Mansion, Pirates, Tiki Room, Carousel of Progress, etc.
The best for kids In Epcot: spaceship earth, nemo and turtle talk with crush (we also love soarin, but it's currently being upgraded and has a height requirement) In Hollywood studios: (if preschoolers, the Disney jr show is adorable), toy story mania for sure (maybe muppets? Also the little mermaid show...we like the great movie ride but some kids might find that scary) We can take or leave animal kingdom, but I know some people really like it (there is a fun safari ride and a whole kids area)
The back of Epcot is an around the world type deal...hit or miss for kids, but out the back of Epcot is the boardwalk which is cute
Don't forget Disney springs has some fun things and you can make dining reservations at any of the hotels (not just the parks!) we like the whispering canyon cafe at wilderness lodge (it's like a comedy family-style meal)
Most of the best kid attractions are at the magic kingdom though.

We are currently thinking of doing two days in Magic Kingdom . Kids love Disney, Jr so we made a reservation at Holleywood & Vine for breakfast.
We have only done Epcot without kids and it kind of felt like the state fair - eat your way through it. I don't know if I'd take littles there.

I agree. DH and I recently did a kid-free day at Epcot, but that was mostly because we wanted to take our time going through the World Showcase (it was during the Food & Wine Festival). There are quite a few great attractions for kids there, and the cool thing is, it would be relatively quick to do because all the attractions are at the front of the park so if you wanted to bypass the World Showcase (except maybe to eat), you could do it very easily. Epcot is definitely worthwhile.
Ugh! This is so overwhelming! We are getting four day passes but no park hoppers. I've seen a deal on undercover tourist for four day passes with a free fifth day, so maybe we'll get those and see how the kids are feeling after a few days at the park. We leave in a month...so little time to plan. We weren't sure if my husband was going to be going on his business trip so we haven't planned anything until now.

Yea those tickets from ut are a decent deal. If your time is flexible there are a few things you can do. Leave a day for just the resort, pool, maybe visit a resort.
Staying off site makes park hopping or midday breaks not as appealing to me. But we've never stayed offsite, so I'm not sure how timing/transportation would work out.
One idea is do the 5 day ticket for the 4 day price and then maybe have your studios and or ak day end earlier, then do the pool, relax in the afternoon. Then one day, relax in the am and head to Epcot in the afternoon for the evening.
Definitely get to the mk 1/2 hour before it opens.
