If your main focus is Harry Potter, you can do both in one day. If you wan to do everything in both parks, you would need two. I think the two parks are worth it!
We're doing both parks in one day this coming September, and we have some big time Potterheads in our family. We'll just do as much as we can in the one day.

When we went, they had not yet opened Diagon Alley. We spent quite a bit of time in Hogsmeade, and even so, we would have had plenty of time to visit another Harry Potter area if it had been available. I would definitely do both! I loved the frozen Butterbeer.
Depending on the time of year you go, it may not be too crowded. We went in early November and as soon as we got to the park, we went straight to the Harry Potter and the Forbidden Journey ride (it's located inside Hogwarts castle) and were able to walk right on to the ride. It definitely got busier in Hogsmeade as the day went on.

Both for sure!! I'm a really big Harry Potter geek. If you buy/own a wand from there, there are places in hogsmade and diagon alley that you can point your wand to and do spells and it'll do things. I loved loved loved it and the butterbeer is a definite also. So much fun!!
Also I am SUPER JEALOUS! I'm a dissenting opinion on this but I did not enjoy butterbeer. It was too sickly sweet and I say that about almost nothing. Instead I would definitely get fizzing whizz bees. So yummy.
Also you can buy tall boys in line for Escape from Gringots. If the line is long DO IT. it is such a delight.
ETA and now I'm going to spend the rest of my evening watching videos about WWofHP On YouTube.
You can totally do both in 1 day. I took my sister for her 40th birthday (because we are dorks and we love it) and we were there at opening, and did both thoroughly by 2pm. It's awesome.
Diagon Alley is better if you really need to limit to one.
Be sure to talk to the Knight Bus driver outside Diagon Alley. And look for Kreacher in the window at Grimauld Place.
Butterbeer is quite tasty, and you can spike it with an adult beverage to make it even better...what did we have, rum? @32flavors
I legit got teary eyed when I saw a picture someone had posted of the door to the potions room in Hogwarts Castle with a single lily placed there after Alan Rickman's death.
I cannot wait for the Hollywood park to open. I get happy feeling whenever I see the Hogwarts spires in the distance while in Burbank.

My family does an annual trip to Disneyland at the end of May, and I'm trying to get my family to agree to skip out on a day of Disney to go to WWoHP. My mom is excited to do it, but my brother, who I thought would be my biggest ally, said he has to either read the rest of the books (he's only read 1) or watch the movies. And he calls himself a nerd!

OH and if the lines aren't long, go through the castle and gringots regular lines at least once. The single rider lines are fantastic but you miss a lot of the decor. After I'd seen them once, then I just hopped into the single rider lines because they are much faster.

We got to the Hogwarts ride early in the day when there was no wait and I was actually bummed that I didn't get a chance to geek out in all the rooms. It seemed so cool!
OHh and you also have to ride the train both to and from Hogwarts - the ride is different depending on whether you're heading to Hogwarts or Diagon Alley.
