H and I have two beef tongues from when he bought our cow a year ago (they gave us an extra). We are going to cook both today and will use part of it for tacos tomorrow. Does anyone have suggestions for the rest of it? I'm thinking it's basically just going to end up being cooked, shredded beef.
I've never had it but my cleaning lady left me some rice with a meat I've never had and for some reason I thought it might be tongue. It kinda tasted like shredded pork or chicken.... but not exactly.

Yes. It was really good! It had all kinds of things in the rice and then the shreddy meat, but for some reason, it didn't taste like pork or chicken or even beef. It was good though.

It looks like a tongue! No, thank you. I'll take anything that doesn't look like an actual body part, thankyouverymuch.
The butcher also had a pig's head in the display case. The head. of a pig. Right there in the case.

I have some not-so-fond memories of my step-grandparents feeding us pickled beef tongue straight from the jar one of the first times we'd ever met them.
My mom made cow tongue quite often growing up. We always had it in tacos with onions, cilantro and lime. I ate it because I had to but wasn't a fan. I won't eat it again. Sorry not really helpful, but you brought back memories lol.
PS - the only reference I really have for tongue is the Ramona book where she can tell her mom served tongue because she scrapes the sauce off and it's got the taste bud bumps. Barf.
So do you cook the shit out of beef tongue or is it a quick cook time to keep it from getting chewy? Like, do you crock pot it to oblivion or no?

Basically, yes. But I'm using the pressure cooker. I've eaten tongue, but never actually made it, so we'll see how it turns out. I'm doing 65 minutes on high pressure with onions, garlic, jalapeno, bay leaf, and red pepper flakes.
eta: It's a muscle, so pretty tough. You have to think of it like you would any other tough cut of beef.
