How do you handle references when you don't want to tell your boss and/or coworkers your leaving? I have two coworkers who I would love to use as references, but I would prefer not to tell them I'm leaving until I really have to. The application has 4 reference fields that are required.

Write on the application, "references available upon request."
In the interview, tell them your job search is confidential, but if and when they decide to move forward to offering you the job, you will be happy to provide 4 references at that time.
Don't ask your co-workers to be a reference for you until you are pretty sure the job is going to work out.

They usually dont call your refernces until the job is basically yours. So if you do "upon request" hopefully, at that point, you will have to tell them anyway. You could also lie and say you are applying to a volunteer position, but lying is never a good idea.

Not always true. I've had references be called and did not get the position.
