This is pretty good and super easy (although you do have to put the sauce in 30 min before it's done so I know that doesn't work for everyone) but only 3 ingredients besides the chicken!
DD loves chicken and sausage creole stew. It's chicken, sausage, tomato paste, tomato sauce, diced tomatoes, and Cajun seasoning. Add peppers and brown sugar at the end. Serve with rice.
You could do buffalo chicken - I'm trying to remember the recipe, I think 80s shared it. Maybe ranch seasoning, buffalo/hot sauce & a little butter? We then shredded it and at it on rolls w/ extra hot sauce and/or blue cheese/ranch dressing. Celery & carrots on the side.
Of course my kids generally like spicy foods, so the might not help.
Or maybe get one of the indian simmer sauces at trader joes?

I've got chicle thighs cooking in onions, garlic and salsa verde right now. We will be having it over tortillas with corn, avocados and chopped cabbage.
