Something like Blue Apron, but cooking for one? I really like the idea of a boxed food service, but they're all for 2+ people which doesn't make sense for me. I don't want to be eating leftovers all the time.
The servings for two aren't huge--it would work well for dinner + lunch the next day. I personally hate going through the effort of cooking if I can't get two meals out of it.
me, too. You can also make a couple recipes at once and then mix it up with the leftovers so you're not eating the same thing in a row.

My friend actually runs a business like this, where she cooks + packs people's meals for the week and delivers it to them. You might be able to find a service like this in your city.
I am in a similar boat, but I can't really afford these types of services/food deliveries. I do this instead:
On Sundays, I plan out a few meals for the week. Usually it looks like this: breakfast - egg muffins/quiche (4 days worth) overnight oatmeal (3 days worth) lunch - soups & salads (7 days worth) dinners - 2 large meals (usually something like spaghetti or casseroles or tacos or chicken or whatever) divided into 6 servings, three that I can freeze and take out the morning i feel like eating it. plus I make a big thing of roasted veggies, whatever I'm feeling that week, plus a big thing of quinoa or some other type of grain. snacks - yogurt with chia + berries, sweet potato fries, roasted chickpeas, fruits, HB eggs, smoothies, etc.
On Monday morning (my day off) I shop early in the morning before anyone is at the store, then go home and prep EVERYTHING and divide it up into containers for every single meal. That part is probably the most difficult, but really helps with serving sizes.
I spend about $40-70 a week, depending on ingredients. I waste nothing. One meal a week is a "free" meal, usually I go out.
It makes my life SUPER easy and it's not very expensive and it only takes about 4-5 hours to shop + cook it all + clean, and then I don't have to cook at all the rest of the week. Yes, they are technically "leftovers" but I really do get a ton of variety and I don't get bored with the food because it's stuff I want to eat.
Before I started doing this, I wasted SO MUCH food and went out to eat SO MUCH because being single SUCKS when it comes to food. I would also let dishes pile up because a) single, live alone, nobody cares and b) lazy. Now I just do them all in one day when I cook. It's super easy to keep up with my daily containers for cleaning, takes about 5 minutes (no dishwasher).

This is actually what I do now and it works well, I was just looking for easier and more variety. I tend to make the same things over and over. There may be a meal place in KC that I could go to now and then, but there isn't one in my town.
And sorry everyone else, I can guarantee you I won't eat the left overs. Blame it on how I grew up, poor with a lot of casseroles. If I can take the same items and make something fresh, then I'm ok. Or I'll eat the same thing 2 or 3 times in a week, but only if it's made fresh.

I used www.freshly.com/ for a while a year or so ago. I stopped because there wasn't much variety, but it looks like that has changed. The food was tasty and only for one person.
You can easily divide the meals for two and cook them separately at different times during the week. I do that with Hello Fresh all the time, especially the fish dishes. Last night I made salmon, asparagus & couscous, but just cooked half the asparagus and one salmon filet. I'll make the other half tonight & reheat the remainder of the couscous.
As long as you pick recipes with cuts of meat vs ground beef or pasta dishes, this is really easy to do.
