Ooh, we have tons of ham leftover. Tomorrow we will just eat plain old leftovers. On Wednesday I'm planning to make homemade mac n cheese with ham in it. We will probably do some sandwiches too. There is a pull apart ham and cheese slider recipe floating around on Pinterest that looks good but it makes a tray full and I don't really need that many sandwiches at once.
I have frozen a few bags as well and will probably make cheesy scalloped potatoes with chopped ham inside, at some point.
I keep a Ziplock of diced ham in the freezer. I add it to scones, breakfast casseroles, omelets, or just keep it on hand to warm up and eat with eggs for a quick meal.
You can always dice it and freeze it to use in casseroles/quiche/omelettes/etc.
Yeah, I've frozen ham. It freezes fine. Not really to be eaten as an entree because the texture might get weird, but chopped up in things, it works well.
In addition to the other suggestions, you can out it in pasta salad and in biscuits/scones.
We would probably eat two of those pounds in sandwiches. I also add it to cheese broccoli soup, make a few casseroles and freeze them, as well as eating ham for an additional dinner.
Ham is versatile so you can really use it in place of any meat, though I doubt tacos would work.
I borrow my mom's meat grinder and make a "ham spread" with a bit of mayo and chopped pickles. It's much better than it sounds
Add in some white cheddar cheese (ground up) and you've got my family's version. And I agree, it's much, much better than you might think. Our family might be addicted to it, in fact, but we're unlikely to admit it.
