I had a two tubes of grands biscuits in my fridge that I had to use so I made this...
I made loaded mashed potatos minus the butter and milk because I blended it with my stick blender. So cheese, bacon, and potatoes. Then flattened each biscuit and filled them with the potato mixture. Rolled them over into a pocket and put an egg wash over them. Baked for 18 min at 425 and they were beautiful little grandpockets! Easy but a little time consuming and a lot of carbs, but for a comfort food fix they're great. Plus they're not huge but super filling so eating 2 of the rolls makes you stuffed!

I'm always looking for stuff to freeze in individual servings, and while this might be a killer as an everyday side, I think this is emminently freezable. You could >could< even add some steamed veggies to make it more balanced. And a low-salt ham instead of bacon would make it healthier, also. But I'm totally onboard with your recipe, myself. Gonna try this as a snack-y, fun dinner one night during the first week of school.
