We struggle with this with C. We basically just keep offering (not the same veggies every day). He will lick the ranch dressing off of bell pepper, shredded carrots, or cucumber sticks. We're happy if it gets anywhere near his mouth. He will, however, eat the veggie burgers that are mushed up veggies (like Morningstar Farms black bean burgers) and I can "hide" veggies in some foods.
My DS is the same age as yours. He eats not one vegetables and the same processed meats yours eats but will also eat grilled chicken. He won't even touch a meal if he sees anything suspicious like peppers or onions. We've had luck with carrot cake muffins but that flavor was masked with cinnamon and sugar as well as grated zucchini in scrambled eggs.
Does she like pasta? This is really random, but we recently got one of those spirulizers, and DD thinks it's fun to eat "red spaghetti" (red pepper), "green spaghetti" (zucchini), etc. She generally won't touch either of this things in normal vegetable form.

Ds1 doesn't eat any veggies either outside of pouches. Like once a month he will eat one baby carrot. He will very occasionally eat peas at the drop in daycare he goes to sometimes.
We let DD put Parmesan cheese and salt and pepper on her veggies. It isn't a ton but enough to think she's making them taste better. Would she like that as a way to customize her veggies?

So far we've heated the noodles in sauce (normal spaghetti sauce and a pad Thai sauce) for actual meals, but DD likes to eat them raw while DH is making dinner, too.

Lane won't eat veggies either- won't even try them out of principle. Every few days I do give him a smoothie and call it "juices"- I stuff with spinach, and have done sweet potatoes in there too. I also make a double batch of these veggie muffins for the freezer & he crushes them at breakfast. cupcakesandkalechips.com/healthy-carrot-zucchini-mini-muffins/?m I try to give him one or the other of these every few days and keep giving him fruit.
We've recently had some luck with DD "helping" me in the kitchen. She stands on her stool and watches me chop veggies and then helps move them into bowls or whatever. She's a lot more interested in eating them once they are cooked if she "made" them (she usually declares that she made dinner all by herself at mealtime!)
If she likes things like nuggets, will she eat those veggie patties (Dr. Praegers)? DD loves those, doused in ketchup, of course.
Also, for some kids, it's easier to focus on one vegetable at a time rather than a big variety. So you can do a veggie of the week and serve it several different ways--puree, roasted, part of a soup, raw, part of a pasta dish, etc.

Most of DS's veg consumption is a "casserole" or some other way of including it in the main. He also likes the Weelicious spinach ricotta bites (I make mini muffin size) and I throw those in his lunch.
DD really likes lentil snaps, and they're brown so they don't necessarily look like vegetables.
She also likes this vegan mac and "cheese." The "cheese" sauce is made from carrots and potatoes. TBH it doesn't really taste like cheese, but it's not bad and the color and texture are similar: www.brandnewvegan.com/recipes/macaroni-and-cheese
I also add powdered spinach and kale to stuff like soup and pasta dishes. If you don't use too much you can't taste it.
Costco has delicious chocolate muffins in the frozen food section - made from carrots and zucchini. I sampled and they were yummy. My C won't eat them because she doesn't like chocolate but my nephew with ASD loves them - they may be his only source of veggies.

There are lots of recipes out there for homemade chicken nuggets with veggies hidden in them. I've never tried any of them but if you google chicken nuggets with vegetables you'll have your choice. You can also buy pasta that has a full serving of veggies in it. We've used that when the girls were little. It's from Barilla. We do tons of zucchini muffins. The girls eat them like crack. We use this recipe and I sub out apple sauce for half the oil to make them a bit healthier.
Does she like muffins? Spaghetti? You can grate carrots and zucchini and hide them in both. We also have had success having DD1 "help" me cook and she eats all kinds of raw veggies as I'm chopping them up. Bell peppers (red, orange, yellow) are a favorite since they are super sweet.
